King oyster mushrooms on toast with garlic and parsley. Video available.
Somewhat relatives of the “regular” oyster mushroom, the king oyster mushrooms are quite different. Also cultured crop rather than wild, these big footed fungi are lovely to cook in quite some ways. They have a firm texture that can take the heat for longer and a small cap that won’t disintegrate whist cooking.
These mushrooms aren’t that easy to find in the supermarkets, however, sometimes you might just get lucky, or order them online. Below there’s a simple recipe that highlights these awesome fungi in a quick and easy way with just a few ingredients.
- 600 grams king oyster mushrooms
- 4-6 cloves of garlic (to taste)
- 100 ml olive oil
- salt and pepper
- fresh parsley
- bread to serve
So i choose to have fried bread rather than toast because I like the flavour more. It’s also healthy as I’ve used olive oil, which is good for you. But on the other hand, should you choose toast, that works as well.
Using the same pan that I used for the bread, add more olive oil and drop in the sliced garlic. It just needs to warm through as the oil gets to the high temperature. Then add the thickly sliced king oysters. Season to taste with salt and pepper and saute for about 8 minutes.
Sprinkle with freshly chopped parsley at the end to keep the fresh flavours and vibrant colour. A touch of lemon juice can also be added, but I just didn’t have any to hand.
The king oyster mushroom has great flavour, a silky but firm texture and the aromas are much better than your “regular” oyster mushroom. If you’re a fan of mushrooms then the king oyster is a must try.
