Oven baked stuffed peppers with minced chicken, cauliflower and smoked meat. Video included.
My daily struggle continues. No carbs. Not my choice, but my better half’s diet. So I carry on, trying to invent new dishes with limited resources. Some are not worthy of posting here, or indeed anywhere else. This is how I came across this. Oven baked stuffed peppers.
I replaced the rice (that I normally use) with cauliflower “couscous”. Raw. Then pork with minced chicken breast. I even minced the chicken. But just to be a bit naughty, some hot sauce went in. My own homemade sauce. Then for even more flavour and texture, some smoked bacon lardons. The result was rather good I’ve been told.

- 400 grams chicken breast diced (or minced chicken)
- 200 grams cauliflower in small florrets
- 1 red onion (white onion is fine too)
- 1 small fennel bulb
- 100 grams smoked bacon (lardons)
- 2 large peppers
- 50 ml oil
- 1 spoon hot sauce (to taste)
- black pepper
- oregano or parsley (dried or fresh)
Short tips and hints.
As I mentioned I minced my own chicken breast. Simply, using a food processor as I really didn’t want to go through the trouble of setting up and then washing the mincing machine. You need to pulse for a short time. Don’t let the blade work the meat too much, you’ll end up with a paste. Not the best for this dish.

Dice the bacon (if not already cut into small lardons). Not too finely, you need some extra texture in the finished product.
Use fresh oregano or parsley, but if you haven’t got any fresh, then dried will do. For the hot sauce, use the one you like or have available. As said, I have my own, made fresh a few days ago, full of flavour but not so spicy, medium hot.
When adding the meat mix well. If not the meat will stick together, but break it up with the wooden spoon into small bits. The cauliflower went in raw, it will cook in the oven and keep everything nice and juicy. For an even juicier and tastier dish of oven baked stuffed peppers, try using chicken tights instead of breast. More flavour and won’t dry as much.#
That’s all to it. Serve them with salad, olives and whatever else you fancy. Maybe an extra dash of hot sauce.
